Authentic cheese with holes
The Bon Repas is an authentic cheese with holes made from thermized milk. This farmstead cheese is prepared according to a unique recipe and has an unprecedented creaminess. The taste is very accessible and slightly sweet and a bit nutty. The cheese is named after the polder Bon Repas, located in the Krimpenerwaard. Bon Repas means ‘good meal’ in French.
To get the holes in the dairy, propionic acid bacteria are added during the preparation process. In the maturation process, these bacteria create the large holes in the dairy. To make these bacteria active, the Bon Repas is first matured 14 days at high temperature (20 degrees). As a result, the cheese also starts to grow in an oval shape. In total, this unique cheese with holes has been maturing for 8 weeks in our warehouse. The result is a unique farmstead cheese with a particularly soft and creamy character. Nice and sweet and mild in taste.
