Slim farmstead cheese
A farmstead cheese with less fat, it is 30% F.I.D.M. instead of the 48% F.I.D.M. which a regular gouda is. This cheese has matured for 12 months and therefore it has beautiful ripening crystals in the dairy. The taste of this thermized cheese is rich, nutty and slightly sweet. Skimming the milk, which is needed for this 30% F.I.D.M. cheese, requires precision. Fortunately, the cheesemakers, family van Erk from Berkenwoude, have that in them.
