What is grass cheese?
Grass or spring cheese is made of the milk that the cows give after they have returned to the pastures after the winter. The first milk they give during the first week still contains substances of the feed that they were given inside, so it is crucial that this milk is not used to produce grass cheese. But after a week, as the cows now only eat the new spring grass, the milk no longer contains the remnants of winter feed and their milk can be used to make this unique type of cheese. The cheese needs to mature in the warehouse for about 4 weeks to develop its wonderful taste, meaning that the first grass cheeses are ready to eat after 28 days.

Why does it taste so good?
The cheese gets its unique taste because the milk of the first spring grass contains softer milk fats than older grass. The tips of the fresh grass also contain more nutrients and vitamins, making the cheese creamier and softer than regular cheese. And although the cheese is creamier and softer, it doesn’t contain more fat. Grass cheese even contains more fat-burning substances than regular cheese!

When can you buy grass cheese?
Grass cheese is a unique seasonal product and, officially, is only available in stores for two months. This is because this cheese can only be made with the milk that the cows produce when eating the first spring grass. As soon as the farmer has mowed his fields for the first time, the grass that grows back contains less ‘fat’ than the wintered grass. And even though the cows still eat grass and the fat in their milk is softer than when they eat only hay and silage grass, nothing can compare to the first, young grass. As such, grass cheese is only available in May and June. Cheese produced after this period can no longer be called grass cheese because it is not made of the milk produced after eating the young spring grass. Its exclusivity is also why this cheese is so hugely popular.
