Mont Vélan Reserva is matured for 12 months. Its little brother Mont Vélan is matured for “only” 6 months. The Reserva has a strong flavor. A small crystal in combination with the strong taste shows that this cheese has been matured for a year.
This cheese takes its name from the mountain “Mont Vélan” in the Swiss-Italian Alps. The ingredient for this delicious cheese is Alpine milk from Swiss Brown cows. The milk from these cows has a balanced composition of fat and protein.
