Happy Mrs. Jersey

Happy Mrs. Jersey is an organic cheese made from 100% Jersey milk. The cheese is produced from the organic milk of 62 Jersey cows from Melkveehouderij Sprangers in Kaatsheuvel. These cows are housed in the innovative Kwatrijnstall, which is known for high animal welfare, strong ammonia reduction, and a beautiful integration into the landscape.

Jersey milk has a different composition of fat and protein compared to Holstein cow milk. The fat content (5.9%) and protein level (4.2%) are higher, which makes the cheese even creamier and fuller in flavor. Additionally, Jersey milk is naturally richer in vitamins and minerals (twice as much), carotene, and conjugated linoleic acid (CLA) than milk from Holstein cows. This results in a particularly rich cheese with a distinctive taste.

In addition to its different composition, Jersey cows emit 20% less nitrogen in the production of 100 kg of cheese compared to Holstein cows. The hard facts show that the milk production from Jersey cows leads to a reduction in land use (11%), water consumption (32%), and ecological footprint by 20%.

Jersey cows are rare and are kept only in a few places. Furthermore, the Jersey cow is a strong breed that efficiently utilizes its feed, using less feed for the same amount of milk. This makes the Jersey cow very suitable for organic farming. However, the cow is smaller and produces less milk.
