Weydeland Spring Cheese is a special cheese that is only available in May and June. This cheese is even creamier and softer than you’re used to from Weydeland Cheese. Spring cheese is made from the first milk from cows that are allowed back into the spring pasture after a long winter. Often the moment when the cows first go into the meadow is accompanied by a ‘cow dance’. The cows don’t know how fast to run into the meadow and make the best jumps! The tender grass is also a good reason for the cows to run to the meadows. This young grass contains a lot of carotene and vitamins which gives spring cheese a more yellow color. Thanks to the softer fats in the milk, the cheese is not only much tastier, but also richer in nutrients. This is due to the high content of polyunsaturated fatty acids.
